You must have noticed that there is no more a thick layer of butter floating on the surface of milk produced by regular companies. This effect is achieved by milk homogenization. Through milk homogenization, fat globule in milk can be smashed into smaller sizes.
Casein particles become smaller accordingly. This will slow down the formation of single cream.
Compared with non-homogenized milk, homogenized milk may be less creamy, but it is equally nutritious and even more delicious.
